I’m always looking for new recipes to try and Pinterest is one of the easiest places to find them! I have to say that most of the recipes I’ve made were great with a little tweaking to fit my taste. Yes, I’ve come across a few really bad ones as well. Today I’m sharing 5 of my absolute favorites. How about whipping one up this weekend!

Breakfast

Sweet Potato Hash & Eggs

This dish is so good that I sometimes eat it for dinner! Cut your sweet potatoes up in tiny little pieces (the smaller, the faster they cook) and fry them in a little olive oil. Top with an over easy egg or two and add some salt & pepper to taste. I don’t add any of the other stuff.

Lunch

Caprese Grilled Cheese

Need I say more? So tasty and quick to make!

Appetizer

Chicken Enchilada Dip

Now I haven’t made the dip for myself yet (I’d eat the WHOLE thing) but my friend made it for a party and oh my gosh, SO good! It was gone almost immediately. I’m definitely making this the next time I have guests over! This will be awesome for football season!

Tip from Timika – Instead of using the green chile pepper & the jalapeno pepper, use one can of
original ROTEL

Dinner

Honey Chicken Kabobs

These kabobs are a constant dinner request in my house. My husband and I are obsessed with them and they are so easy to make! I prepare them, he cooks them! We don’t eat peppers so we just use the chicken with the marinade. SO delicious and I always make an extra kabob to eat for lunch the next day! Need a side item? Try these cheesy potato pockets! Perfect combo if you ask me!

Dessert

Deep Dish Cookie Pie

We use Toll House Refrigerated Cookie Dough. Bake your dough in some ramekins and plop some vanilla ice cream on top. What’s not to like?
