Back To School Summer Salad

Hello all you chic people out there! I’m Katherine (the Duchess) from the Duchess of Plumewood and I’m one of For Chic Sake’s food contributors! I can’t wait to share some of my favorite recipes and new concoctions with you! To view my bio, click here.

It has been almost a month since the school year has started and I am not willing to let go of summer! So I made up my can’t-let-go-of-summer-but-school-is-here salad. For Chic’s sake is that name too long? Hmmmmm let’s call it my Back to School Summer Salad. It combines a little bit of summer, strawberries, and a little bit of school, Ramen noodles, to create an A+ salad!

The catch? There’s always a catch right? You make this salad in two parts so you cannot leave it until the last minute, sort of like how you cannot start studying for a test 10 minutes before… You need to make the dressing the night before because it needs to marinate in the fridge overnight.

For the dressing you'll need:


  • 2 tablespoons sugar
  • 3 tablespoons apple cider vinegar
  • 2 cloves garlic (minced/finely chopped/crushed)
  • ½ cup olive oil
  • 1 package of Ramen Noodles Oriental Flavor


  1. Pour the sugar, vinegar, garlic, olive oil and Ramen flavor package in a jar or dressing bottle (one with a wide mouth trust me) and shake it up. (Shake shake… shake shake, you get the picture).
  2. Take the noodles that are still in the package and crush them up. I personally smack my noodles with a spoon while they are in a plastic baggie.
  3. Once they are crushed up pour them in the dressing mix. Shake it up again and stick it in the fridge to marinate!
  4. The next day the noodles will have sucked up almost all of the oil & vinegar so it will be a little ‘hard’, just stick it in the microwave for about 30 seconds and stir it up before you pour it on the salad.

The next day, it’s time to make the salad part!

For the salad you'll need:


  • 1 head of romaine
  • 1 bunch/bag of baby spinach
  • 2 packages of crumbled feta
  • 1 cup sliced almonds
  • 1 package of strawberries


  1. Tear up the romaine, slice the strawberries, and toss with the rest of the ingredients.
  2. Take the dressing out of the fridge and pour it over the salad and toss the entire thing.
