Caprese Grilled Cheese Caprese Grilled CheeseHere’s a quick and easy recipe for a tasty sandwich that combines a caprese salad with grilled cheese…and it’s ready in under 10 minutes!  Using fresh mozzarella, store-bought pesto, a juicy tomato, and some crusty bread, you can create a crispy sandwich that looks great and tastes even better!

Caprese Grilled Cheese


  • Fresh Mozzarella Cheese
  • Ripe Tomato
  • Pesto
  • 2 Slices of Crusty Bread
  • Olive Oil


  1. Warm a skillet (or panini press if you have it!) on medium heat and add a bit of olive oil. Cut a slice of tomato and cheese. Slather some pesto on the face of each slice of bread.
  2. Put a slice of bread in the hot skillet with the pesto facing up, layer on the cheese and tomato, then finish off with the top slice with the pesto side facing down.
  3. Grill for about 3-4 minutes on each side until your bread gets crispy! If your bread finishes before the cheese is melted, pop it in a warm oven for a few minutes to finish up. Slice the sandwich on a diagonal and serve it on a bed of leafy greens for a gourmet caprese grilled cheese! Enjoy!
