Crock-Pot Ranch Chicken with Broccoli and Quinoa

With long hours of residency and grad school, there is little time {and even less motivation} to cook once I get home from school or my hubby gets home from work after a 12+ hour day! But with our lovely Crock-Pot and even lovelier slow cooker liners, both cooking and clean-up are a cinch! Plus, it’s such a great feeling to walk into my building after a long day and realize the delicious smell is coming from my apartment!

I adapted a tasty recipe I found on Pinterest to include veggies and quinoa so the Crock-Pot chicken turns into a complete meal without having to get a pot dirty making a side dish. Let’s face it, having to cook something else to go along with your Crock-Pot meal kind of takes the fun and ease out of it! Enjoy!

Crockpot Ranch Chicken with Broccoli and Quinoa

Ingredients

  • Boneless skinless chicken breasts (about 2-3lbs) frozen or fresh
  • 1 pack ranch dressing mix
  • 8 oz light sour cream
  • 1 can low-fat cream of chicken soup
  • 2 cups water or chicken broth/stock
  • Chopped yellow onion
  • Pinch of salt and pepper
  • 1 package frozen broccoli (or veggie of your choice)
  • ½ cup quinoa
  • (if you want to omit the veggies and quinoa, only add ½ c. liquid)

Instructions

  1. Put all the ingredients in the crock pot and cook on low for 6 hrs, stirring occasionally. It’ll warm your heart and soul on a cool winter night!

  1. Looks yummy! Do you think that you could sub rice for the quinoa?

    • Yes! You can add rice, but to prevent it from being too mushy, try adding it 2.5hrs before the dish is done cooking (so at the 3.5hr mark if on low for 6hrs) instead of at the beginning like quinoa. Enjoy!

  2. What would be a good side to go with this dish? For example corn bread, garlic break?

    • I’m a sucker for corn bread! It’s one of my faves and I could eat it with almost anything. I would go good with this.

  3. I prefer fresh broccoli……how can I adapt this recipe using fresh broccoli?

    • Hi Kendra! You can put fresh broccoli in the crock pot, but not for 6 hours. I recommend that you combine all of the other ingredients, cook them for 3-4 hours, then add the broccoli for the last 2-3 hours. Hope that helps and thanks for reading!
