Pecan Pie Mini Muffins

Autumn Cakelet Pan Pecan Pie Mini Muffins

Last Fall, some very close friends of mine gave me the Autumn Cakelet Pan from Williams-Sonoma as a hostess gift! Not only that, they passed along a wonderful recipe which seems to be made for this adorable pan. Serve these mini muffins to family and friends on a chilly night while sitting around the fire gabbing away! They are absolutely tasty and their cute seasonal shapes will make everyone say “Awwwww”!

Pecan Pie Mini Muffins

Ingredients

  • 1 cup finely chopped pecans
  • ½ cup flour
  • 1 cup light brown sugar, packed
  • 2/3 cups butter, melted
  • 2 eggs, very lightly beaten before adding

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray round mini muffin pan or Williams-Sonoma Autumn Cakelet Pan with Pam.
  3. Combine all ingredients, add directly to muffin cups.
  4. Bake for 17 minutes. Edges will be slightly brown/crispy.
  5. Cool in pan for 5 minutes before moving to cooling rack.
