A sweet moist chocolate cake will melt in your mouth after the first bite. A decadent chocolate covering will please your palate and the crunch of almonds and hazelnuts will make you swoon. This is  true paradise for a true chocoholic, a miniature cake that you can make in less than one hour and that will please each of your guests. I promise after one bite they will be asking for the recipe!

Recipe: Chocolate Cake covered in Chocolate Ganache

Ingredients

  • For the cake:
  • 3/4 Cup Flour
  • 1/4 Cup Stevia
  • 1/4 Cup Cacao
  • 1/4 Cup Water
  • 1/4 Cup Brewed Coffee
  • 1/4 Cup Vegetable Oil
  • For the chocolate ganache:
  • 1/2 Cup Vegan Chocolate Chips
  • 2 Tablespoons Vegetable Oil
  • For the toppings:
  • Almonds
  • Hazelnuts

Instructions

  1. For the cake: Preheat the oven to 350 degrees.
  2. In a bowl: mix the flour, the sugar and the cacao.
  3. Pour in the water, the coffee and the oil and continue mixing until everything is incorporated.
  4. The mixture will be a little thick.
  5. Fill an oven proof bowl or pan with batter.
  6. Bake for 15 minutes.
  7. Let it cool and cut to the desired size (I use a round cookie cutter to cut out mine).
  8. For the chocolate ganache: Place the chocolate in the microwave for 30 seconds.
  9. Mix well and cook for 30 seconds more or until melted.
  10. Add the oil and mix again.
  11. Assembly: Cover the cake with the chocolate ganache. Top with almonds and hazelnuts.
